This collaboration is for the birds!

The World Center for Birds of Prey is excited to partner with Western Collective on this limited series of hand-crafted beers featuring birds of prey.  A portion of the proceeds from every beer sale supports conservation education for Idaho students! 

Our Story

These Boise-based organizations find synergy in their missions to support the community and stand out as leaders in their respective fields. As Boise welcomes newcomers from throughout the state, country, and world, it’s important to both Western Collective and the World Center for Birds of Prey that the city’s amazing stories continue to thrive.

This collaboration features a quarterly beer release, The Birds of Prey Series. The series kicked off the lineup with Volume 1: The Peregrine Falcon, a Red IPA. Next in the series is Volume 2: Gyrfalcon Coconut Porter. This toasted coconut porter inspired by the striking colors of Gyrfalcons will be available for local preorder on January 23 and officially released on January 27!


“Since moving to Idaho, we have been in awe of all of the falcons, eagles, and owls throughout the state,” said Cary Prewitt, founder & visionary of Western Collective. “We were lucky enough to get to attend fall flights at the World Center for Birds of Prey last year and decided that we wanted to participate in helping bring awareness to the mission of the Peregrine Fund to help ensure people around the state are aware of how magical it is to be surrounded by such awe inspiring animals.” Founded in 2018, Western Collective consistently partners with nonprofits to make impactful change in the Treasure Valley.

Birds of Prey Series Vol. 3: Eurasian Eagle Owl IPA

Brewers Notes: "With the Eurasian Eagle Owl being a top predator and doing its part to maintain a balance in the ecosystems where they live, we needed to match its intensity and create something bold but balanced. This IPA is double dry-hopped with Mosaic and Nelson Sauvin hops for intense aromas of passionfruit, blueberry, mango, and orange. In order to keep this IPA balanced, we went with a blend of American and European malts for just a slight amount of sweetness. Overall, this is a well-balanced IPA that is intensely aromatic, and finishes smooth yet crisp."

Birds of Prey Series Vol. 2: Gyrfalcon Coconut Porter

Brewer's Notes: "We drew our inspiration on this beer from the color scheme of the Gyrfalcon. The base beer is a Robust Porter, which we then aged on freshly toasted coconut. One can expect intense flavors of chocolate, coconut, vanilla, and roasted coffee, with a smooth finish."

Birds of Prey Series Vol. 1: Peregrine Falcon Red IPA

Brewer's Notes: "This fall inspired Red IPA is a perfect companion to watch some birds of prey under the changing of the leaves. We brewed this IPA with 100% Red X malt for a deep and rich malty backbone, and hopped it with some of our favorite classic PNW hops. Cascade, Chinook, Citra, and Centennial hops lend notes of citrus and fresh pine to this well-balanced fall IPA."
